A full banquet of twenty-four courses dating to the Tang dynasty, prized for its soups and served dish after dish like flowing water — counted, with the Longmen Grottoes and Luoyang peonies, among the 'Three Wonders of Luoyang'.
The opening signature of the Luoyang Water Feast: white radish cut into fine threads, dressed in starch and steamed, then bathed in stock to a 'bird's-nest' texture, plated to resemble a blooming peony.
