The Uyghur staple flatbread baked on the wall of a tandoor; Turpan is known for its decorative grape-shaped naan.
Called "polo" in Uyghur, rice braised with lamb, carrot and onion; Turpan's raisin polo is distinctively sweet.
Called "tonur kawap" in Uyghur, a whole lamb slow-roasted in the tandoor, the most honoured dish of a Uyghur feast.
Square meat-filled buns baked on the tandoor wall, crisp outside and steaming within, a common Turpan street and bazaar snack.
