A soft, spicy snack steamed from buckwheat starch, fragrant and tender, hailed as the foremost dish of Qinzhou and the signature taste of a Tianshui morning.
A traditional banquet dish that steams and stews an assembly of stuffed egg-sheet meat, meatballs and pork rind in a generous broth, the hearty centrepiece of a Tianshui feast.
Cold steamed wheat sheets made by washing out the gluten, springy and smooth under a chilli-vinegar sauce, a year-round street snack of Tianshui.

The grand public rites for Fuxi, mythical first ancestor of the Chinese people, held at Tianshui's Fuxi Temple; a first-batch national ICH item from 2006 and a pilgrimage for Chinese everywhere.
A traditional lacquer craft of layering raw lacquer, carving and inlaying with stone and shell; Tianshui ranks among China's four great lacquer schools, added to the national ICH list in 2008.
