Knife-Cut Noodles (Daoxiao Mian)

Knife-cut noodles originated in Shanxi and trace back to the Yuan dynasty, said to have arisen when metal-cutting tools were restricted under Mongol rule and people used iron shards instead of knives; the improvised technique evolved into a distinctive craft carried on for centuries.
Typically served with braised sauces of tomato-and-egg, beef or lamb, and splashed with Shanxi aged vinegar, the springy noodles soak up the savory gravy; a staple breakfast and lunch noodle throughout Taiyuan.
Defined by the hand-shaved willow-leaf shape and springy-silky texture, it is the central emblem of Shanxi's noodle culture.
