Knife-cut noodles are the pinnacle of Shanxi noodle craft: a cook cradles a dough ball on one shoulder and uses a curved iron blade to shave the dough directly into the boiling pot, producing willow-leaf strips thick in the middle and tapered at both ends.

Knife-cut noodles originated in Shanxi and trace back to the Yuan dynasty, said to have arisen when metal-cutting tools were restricted under Mongol rule and people used iron shards instead of knives; the improvised technique evolved into a distinctive craft carried on for centuries.
