The Quanjude Qianmen restaurant, in Beijing's historic Qianmen district, is the birthplace of Quanjude, founded in 1864. It was here that the house first made its name, developing the hung-oven roast-duck technique into a craft famous across China and beyond. As a living site of food culture, it carries more than a century of Beijing roast-duck tradition — the source where this "national dish" and the city's memory meet.
