Patrimonio cultural

The Quanjude Qianmen restaurant, in Beijing's historic Qianmen district, is the birthplace of Quanjude, founded in 1864. It was here that the house first made its name, developing the hung-oven roast-duck technique into a craft famous across China and beyond. As a living site of food culture, it carries more than a century of Beijing roast-duck tradition — the source where this "national dish" and the city's memory meet.

Visita: Here diners can watch up close as cooks roast duck over an open fruitwood fire in the hung oven and carve it table-side — following the craft from flame to plate and taking in the ritual of this nationally recognized heritage technique.
