Crispy buns are a traditional steamed pastry handed down around Anshun's Jiaoshishan town, built on old-dough fermentation with lard folded in for a flaky crust that peels into layers, with both savoury and sweet fillings.

The crisp bun grows from Anshun's folk pastry tradition, with Jiaoshishan town as its source, where the old-dough and layered-oil craft was handed down; in 2024 Anshun was named a "China Ecological Food Landmark" on its account.

Eaten hot from the steamer, diners peel apart the layers before biting into the filling; flavours range from fresh pork to sweet sesame, pickled mustard and peanut sugar, taken as breakfast or a teatime snack.
