Anshun Crispy Buns

The crisp bun grows from Anshun's folk pastry tradition, with Jiaoshishan town as its source, where the old-dough and layered-oil craft was handed down; in 2024 Anshun was named a "China Ecological Food Landmark" on its account.
Eaten hot from the steamer, diners peel apart the layers before biting into the filling; flavours range from fresh pork to sweet sesame, pickled mustard and peanut sugar, taken as breakfast or a teatime snack.
The peelable flaky layers, the wheat fragrance of old-dough fermentation and the savoury-sweet fillings set the crisp bun apart from ordinary steamed buns.
