Peony Yan Cai (Radish 'Bird's-Nest' Dish)

Món ăn nổi tiếng
Giới thiệu

Peony yan cai is the most renowned course of the Water Feast, built from the humblest of roots — white radish. Cut into very fine threads, dressed in starch and steamed, then ladled with a savory stock, it turns silky and 'bird's-nest'-like on the palate, which earned it the old name 'Luoyang yan cai'.

Nguồn gốc

Said to date to the Tang era, the dish transforms an ordinary radish into a banquet treasure, embodying Luoyang's knack for turning the plain into the marvelous. Garnished into the shape of a peony in 1973, it gained the name 'peony yan cai' — fittingly echoing Luoyang's fame as the city where 'peonies are finest under heaven'.

Cách thưởng thức

Eaten hot as the feast's first major dish, threads and broth taken together — fresh, lightly salted and smooth. It opens the banquet yet is often ordered on its own, the first taste by which to know Luoyang.

Đặc trưng

Its art lies in turning the humble into the refined: knife work and a long-simmered stock transform plain radish into something as delicate as bird's nest. Plain ingredients, real skill — a single 'peony' captures the elegance of the old capital.
