Peony yan cai is the most renowned course of the Water Feast, built from the humblest of roots — white radish. Cut into very fine threads, dressed in starch and steamed, then ladled with a savory stock, it turns silky and 'bird's-nest'-like on the palate, which earned it the old name 'Luoyang yan cai'.

Said to date to the Tang era, the dish transforms an ordinary radish into a banquet treasure, embodying Luoyang's knack for turning the plain into the marvelous. Garnished into the shape of a peony in 1973, it gained the name 'peony yan cai' — fittingly echoing Luoyang's fame as the city where 'peonies are finest under heaven'.
