Junshan Shrimp Fritters
Famous SnacksJunshan shrimp fritters are made from fresh Dongting shrimp folded into a flour batter and deep-fried, golden in colour with a crisp shell and tender, fragrant shrimp within, at once fresh, savoury and crunchy.
The fritters grow from the lake fisherfolk's everyday use of their catch—small shrimp freshly netted from Dongting, battered and fried so they keep longer and their freshness shines, becoming a traditional snack around Junshan.
Fried to order and eaten hot by hand or on a plate, dressed with chilli sauce or salt-and-pepper, a common fresh-made treat at street and lakeside stalls.
The hearty bite of whole shrimp in the cake, the contrast of crisp shell and tender centre, and the pure taste of Dongting shrimp are the marks of Junshan fritters.
