Zixi Rice Noodles
Famous SnacksZixi rice noodles are a northern-Fujian specialty popular in Wuyishan, made from rice flour into fine, resilient strands that hold their texture through long cooking, served in a clear broth or stir-fried with shredded pork, greens and bamboo shoot.
The noodles originated in the Zixi area of neighbouring Yanshan County and reached Wuyishan through regional trade; their smooth strands and hearty, savoury toppings made them one of the most common everyday meals around Sangu Resort and the city's street corners.
Soup noodles are most common, with toppings of shredded pork, liver, intestine and greens served piping hot; stir-fried versions come crackling with wok-hei, eaten as breakfast or a late-night snack.
The fine, resilient noodles, full-bodied broth and generous toppings are what make Zixi rice noodles a staple of northern-Fujian street dining.
