What it is

Siguo tang is an iced sweet soup over a honey or sugar-water base topped with a free choice of ingredients; 'four fruits' simply means an open mix of toppings.

Origin

Popular in Quanzhou and across southern Fujian, it is a generations-old summer cooling recipe whose combinations vary freely.

How it's eaten

Seaweed jelly, taro balls, red and mung beans, white fungus, grass jelly, coconut jelly and fresh fruit are added to the sweet water, chilled and spooned up.

Signature

Lightly sweet and icy with layered textures, a single bowl weaving springy, soft and cool elements, it is Quanzhou's most common summer street dessert.
