Runbing (Fresh Spring Roll)
Famous SnacksWhat it is
Runbing wraps a paper-thin wheat skin around fillings such as carrot, bean sprouts, oysters, shredded pork, ground peanut and seaweed.
Origin
Beloved in Quanzhou, it is a traditional festival food for Qingming and year-end gatherings, with every household mixing its own fillings.
How it's eaten
Assembled and eaten fresh: the skin is laid out, stir-fried fillings and sweet peanut powder are added, then it is rolled into a soft, juicy hand-held cylinder.
Signature
One supple thin wrapper holding a medley of tastes, savoury with a sweet peanut note, makes it the signature of Quanzhou's festive table.
