Silk Baby Wrap (Siwawa)

Famous Snacks
What it is

Silk Baby Wrap uses paper-thin rice crepes to enclose a dozen chilled fillings such as shredded radish, houttuynia, glass noodles, bean sprouts and fried peanuts, rolled by hand and dipped whole into a sour-spicy broth—the roll resembles a swaddled infant, hence the name.

Origin

Originating on Guiyang's streets as an economical snack made from local ingredients, it has grown into one of the city's most representative street foods, deeply woven into the memory of generations of residents.

How it's eaten

Lay fillings on the crepe, roll it tight, then immerse the entire roll in the sour-spicy broth for a fully flavored bite rich in texture. The broth is seasoned with toasted chili powder, Huaxi chili and wood-ginger oil, layering sour, hot and aromatic notes.

Signature

Defined by its gossamer crepe, multi-filling content and sour-spicy-aromatic broth, it is the street food experience visitors to Guiyang must not miss.
