The name "Jingwu duck neck" comes from Hankou's Jingwu Road, itself named after a martial-arts hall established there in the 1930s. Around the 1990s, braised-snack stalls along the road perfected medicinal-spice duck neck, and "Jingwu" became the banner for this style.
What made it famous
Jingwu duck neck — spicy yet not harsh, more flavorful the longer you chew — has become Wuhan's signature late-night and drinking snack, with its reputation reaching well beyond the province.
Signature craft
A braising broth of dozens of medicinal herbs is used to slow-cook the duck neck repeatedly, prizing meat that clings to the bone with a lingering spicy-sweet aftertaste.
