Founding

The Youyixin restaurant was founded in 1908, in the late Qing, evolving from the earlier 'Youyicun'; one of Kaifeng's oldest Yu-cuisine houses, in its early years it drew luminaries such as the reformer Kang Youwei and Peking-opera star Mei Lanfang.

What made it famous

Youyixin is regarded as a standard-bearer of authentic Henan cuisine in Kaifeng, carrying on the dining traditions of Song-dynasty Dongjing and the central-plains official kitchens, and remains a classic place to taste genuine Kaifeng banquet fare.

Signature craft

The kitchen specializes in traditional Yu-cuisine technique, prizing control of heat and stock; signature dishes such as carp with crisp noodles and sweet-and-sour soft-fried fish embody the cuisine's balanced, harmonious style.
