Zhengzhou Huimian
名物グルメZhengzhou huimian is Henan's signature noodle dish: broad, thick hand-pulled noodle ribbons cooked in a rich mutton or bone broth and served all together in one steaming bowl.
Huimian grows out of the wheat-noodle traditions of the Central Plains, resting on Henan's deep agricultural base as a major wheat region — a mature local form of the noodle-and-soup eating long centered on the Yellow River valley.
It is eaten hot as a full meal, broth and all, typically topped with mutton, tofu strips, kelp, vermicelli and coriander, with chili oil for those who like heat — the most everyday meal on Zhengzhou's streets.
Its appeal is the union of noodle and soup: the ribbons are broad and springy, the broth milky and deep, and one bowl is warming and filling — the clearest expression of how Central Plains people prize a single, honest bowl of noodles.
