概要

Chaopao, also called firecracker noodles, is a distinctive Zhangye fried noodle. The dough is rolled into inch-long segments that resemble a string of firecrackers—hence the name—then boiled and stir-fried over fierce heat with diced meat, tofu, glass noodles and greens, glossy red and savoury with a faint heat, the bold branch of Hexi Corridor noodle cooking.

由来

Firecracker noodles come from the Zhangye folk kitchen, another Ganzhou invention of noodle form: rolling the dough into short segments lets it soak up sauce and suit hearty appetites, matching the Northwest temperament. Old local counters such as Sun Ji Chaopao have been the go-to for decades when Zhangye people eat out.

食べ方

Served as a main course in a big steaming plate, with a bowl of noodle broth or a side of pickles. The frying prizes precision and freshness; the short segments are coated in sauce, the meat and vegetables well balanced, best mixed through and eaten hot.

特徴

Its firecracker-segment shape, the sauce-clinging stir-fry, and the vivid street name "chaopao" are its clearest marks.
