Goubuli buns are Tianjin's signature dumpling: a thin, semi-leavened skin around a savoury meat filling, crowned with eighteen even pleats that open like a chrysanthemum once steamed.
由来
The name comes from an 1858 anecdote about founder Gao Guiyou — nicknamed "Gouzi" — too busy selling buns to attend to customers, and the bun went on to become a century-old Tianjin staple.
食べ方
They are eaten hot and fresh from the steamer, often with rice vinegar and shredded ginger to cut the richness; a bite releases a rush of broth, making them welcome at breakfast or a full meal.
