Xita cold noodles are freshly pressed noodles of buckwheat and starch served in a chilled, specially simmered broth—tangy, sweet and refreshing, dusted with house chili—a favorite for cooling off in summer.

由来

It took shape around 1952 in Shenyang's Korean Xita neighborhood, drawing on Korean cold-noodle tradition brought by settlers and rooted in Xita over more than seventy years.

食べ方

The noodles are pressed straight into boiling water, chilled, then drowned in broth; diners add chili, vinegar and garnishes to taste, often alongside grilled meat.

特徴

Its soul lies in the springy fresh-pressed noodles and the specially simmered cold broth; in 2017 the craft was listed among Shenyang's representative intangible cultural heritage items.
