Liuweizhai

Liuweizhai is said to have been founded in 1738 during the Qianlong reign, starting as the 'Fuji Liuweizhai Sauce-Meat Shop' with a single pot of aged braising stock, handed down through generations for nearly three centuries.

Liuweizhai's soy-braised meats and pork knuckle are prized for their deep red glaze, richness without grease and intense soy aroma; a staple gift at New Year and festivals, they are a defining emblem of Shanxi deli culture and a certified China Time-Honored Brand.

The meats are braised in a generations-old master stock with more than a dozen spices over a slow fire, emerging tender and deeply flavored with a gleaming red coat and pervasive aroma that keeps well—a model of Shanxi's traditional sauce-braising craft.
