In 1866 the Henan Hui merchant Han Liandeng opened a halal pressed-duck shop in Nanjing's Cangxiang lane; 'Fuxing' carried the wish for the family to flourish anew. His son later opened a second shop by the examination quarter near the Confucius Temple, lifting the name to fame.

名声を得た理由

Each season the finest ducks were wrapped in lotus leaves and coloured silk thread to be sent to the capital as tribute, earning the brand the nickname 'tribute duck' and a place among the icons of old Nanjing flavour.

看板の技

The house keeps the old method of dry-salting, brine-curing, air-drying and gentle poaching, producing the pale skin, tender flesh and clean savoury aroma that define Nanjing-style duck.

文化的位置づけ

Recognised as a China Time-Honoured Brand by the Ministry of Internal Trade in 1992 and again in the first national batch by MOFCOM in 2006.
