起源

The Fuchun tea-pastry craft developed from the founding of the Fuchun teahouse, bringing together Huaiyang dim sum with flowers, tea, pastry and dishes. The core skill of Yangzhou's morning-tea culture, it has been handed down for over a century.

The craft spans dough leavening, filling, shaping and heat control, with distinct methods for san-ding buns, thousand-layer cake and braised tofu strips, and the original Kuilongzhu tea blend—pastry and tea forming a coherent whole.

文化的意義

The Fuchun tea-pastry craft entered the second national ICH list in 2008 and, as part of China's traditional tea processing techniques and associated customs, joined UNESCO's Representative List in 2022.
