Spanish Mackerel Dumpling-Making Craft

The mackerel-dumpling craft is a culinary hand-skill handed down among the fisherfolk of the Jiaodong coast, especially strong in Weihai and Rongcheng. When fish was cheaper than flour, fishers heaped abundant mackerel into the filling and reserved precious flour for a thin skin, gradually shaping the palm-sized, thin-walled, generous dumpling. In 2013 the craft was listed as Shandong provincial intangible heritage, with makers such as Taixiang carrying it into modern production and onto the world's table.

The craft turns on choosing fresh fish, boning, scraping the flesh, beating, seasoning, dough-making, rolling and wrapping: the flesh is cut from either side of the backbone and scraped to a paste, beaten with scallion-ginger water in one direction, then lifted with chive or egg white; the skins are hand-rolled thin yet tear-free, folded into large plump crescents, and boiled so the skin stays springy and the filling tender, bursting with juice—all by hand and by feel.

The mackerel-dumpling craft carries the fisherfolk's culinary wisdom of "feeding dough with fish" and their memory of life by the sea, a vivid sample of how Shandong's coastal food culture and intangible heritage intertwine.
