Beidaihe Yang Sausage Making Technique

The Beidaihe Yang sausage making technique was founded around 1929 in Beidaihe by Yang Tingzhen of Jinan, Shandong, growing from the Western-style ham-sausage craft he learned at a German inn in Jinan and refined over generations into a school of its own; it was listed successively on the Qinhuangdao municipal (2009) and Hebei provincial (2019) intangible heritage registers.

芸能の形態

The craft works pure lean pork through curing, mincing, seasoning, stuffing, smoking and cooking, with the spice blend and heat controlled entirely by the master's hand; the finished sausage is rose-red, thinly sliceable and full-flavoured, a Sino-Western handcraft of sausage making.

文化的意義

The Yang sausage craft bears witness to the modern exchange of Chinese and Western food cultures at a coastal resort, marks the local flavour of Beidaihe, and offers an important case for the study of how food crafts were localised from the Republican era onward.
