Macanese Cuisine Cooking Technique
国家級無形文化遺産 · 第第五批國家級非遺(2021)次選定The cooking technique of Macanese cuisine is a distinct culinary tradition formed over four centuries of East-West exchange within Macau's Macanese community, fusing Portuguese, African, Indian, Malaccan and Cantonese methods and ingredients, handed down within families by word of mouth. In 2021 it was declared by Macau and entered the fifth national ICH list.
Its cooking builds on olive oil, garlic, onion, bay leaf, turmeric, coconut milk and curry, with signature dishes such as African chicken, Macanese curry chicken, minchi and bacalhau balls, prizing the pairing of spices and slow cooking for deep, layered flavours, one of the world's earliest fusion cuisines.
Macanese cuisine is a heritage unique to Macau, carrying the history of Portuguese maritime trade and cross-cultural exchange since the Age of Discovery, a living specimen for the study of global food transmission and ethnic fusion, and the gustatory witness of Macau as the meeting point of East and West.
