The Donghu Vinegar Culture Park, located in the eastern part of Taiyuan, is an industrial heritage and food culture site dedicated to Shanxi aged vinegar, one of the four great vinegar traditions of China and a source of deep regional pride. Operated by one of the oldest and best-known vinegar makers in the province, the park combines a working production facility with a museum, tasting rooms, and gardens that together introduce visitors to the craft, history, and cultural significance of Shanxi vinegar. Shanxi vinegar has been produced for thousands of years using a distinctive solid-state fermentation process built around sorghum, barley, and peas, with an aging period that gives the finished vinegar its dark color, complex aroma, and lingering smoky depth. Donghu, whose history as a modern producer reaches back to the early twentieth century, is one of the standard bearers of the craft, and the park offers a rare chance to see how traditional methods have been combined with modern quality control to maintain the character of the product.

The visit begins in the museum galleries, where exhibits trace the history of vinegar making in Shanxi, the raw materials and tools involved, and the cultural place of vinegar in regional cooking and folk medicine. From there, visitors move into the production areas, where the famous vinegar cellars line up in long rows of clay jars, each covered with a straw lid and exhaling the unmistakable aroma of grain fermentation. Donghu Vinegar Culture Park in Taiyuan's Xiaodian District is a themed experience park centering on Shanxi aged-vinegar brewing craft, spanning more than 100 mu with a vinegar-history gallery, traditional brewing demonstration zone, vinegar culture museum and product sales area. The park preserves dozens of traditional fermentation vats and summer-drying/winter-ladling aging facilities, presenting the complete process from sorghum fermentation through smoked-mash aging.
