Mackerel dumplings are large hand-wrapped dumplings filled with fresh Spanish mackerel—often palm-sized in the Jiaodong region—with thin yet springy skins and a pale, tender filling that releases a burst of juice when bitten, the beloved everyday taste of Weihai and the Jiaodong coast.

Origine

On the old Jiaodong coast fish was cheaper than flour, for fishers lived by the sea and seldom grew grain; so they heaped abundant fish into the filling and reserved precious flour for a thin skin, fashioning the astonishingly large mackerel dumpling—a wisdom of feeding dough with fish handed down for generations, with the making craft listed as Shandong provincial intangible heritage in 2013.

Comment le déguster

Boiled to order and eaten hot from the pot, the dumplings are dipped in garlic paste, aged vinegar or chilli oil—diners break the thin skin, sip the broth first, then eat the fish, the most eagerly awaited taste in every Weihai home when the fishing season opens.
