Pingyao beef consists of whole cuts of local yellow cattle slow-braised in spiced brine, yielding deep-red, richly aromatic and chewy sliced meat — one of Shanxi's most famous regional products.

Origen

The processing of Pingyao beef dates to the Han dynasty, and during the Ming and Qing dynasties it spread widely through the Jin merchant trade network to become a nationally recognised specialty.
