Made from starch ground from fresh water chestnuts, sweetened and steamed in a mold, the cake is pale yellow and translucent, with a springy, slippery texture and a clean, sweet flavor.

Origen

Widely made across South China, the cake is especially common around Guilin where water chestnuts are plentiful—a traditional confection found at morning markets, temple fairs and seasonal festivals.
