The China Hui Cuisine Museum on Yingbin Avenue in Huangshan's Tunxi District is the country's first museum devoted to the lineage of Hui cuisine. Tracing its history, ingredients, cooking craft, classic dishes and banquet culture, it displays the utensils and imagery of dishes such as stinky mandarin fish, hairy tofu and Dao Ban Xiang, with cooking demonstrations and a tasting area, the key place to understand one of China's eight great cuisines and the national ICH Hui cooking craft.
Besuch: In the galleries one follows Hui cuisine from the Song and Yuan through the Ming and Qing, watches the master's fire as he braises stinky fish and fries hairy tofu on the spot, and ends at the tasting area with a full authentic Hui banquet, reading the colour, fragrance, flavour and tableware of Hui cuisine all at once.
