Beef xiaofan is the comfort of a Zhangye morning. The "small rice" is thin dough cut into millet-fine dice, boiled until translucent, then bathed in a long-simmered clear beef-bone broth and scattered with tender yellow beef bits, scallion and pepper; the broth is clear and savoury, the dice silky-smooth, and a bowl warms you to the core.

Beef xiaofan circulates through the lanes of Zhangye—old Ganzhou—a Hexi trick of mimicking rice with wheat, cutting the dough so fine it feels like grains yet suits a soup, fitting the Northwest habit of warming the body with a hot bowl at dawn, handed down as the gold standard of Zhangye breakfast.
