Ganzhou saomian is a long-celebrated Zhangye noodle. "Sao" means a thick, glossy topping of diced pork, tofu, wood-ear fungus and egg, lightly thickened and finished with sesame oil, ladled over springy fine noodles—red and white mingling, savoury with a faint tang—carrying the whole street-kitchen life of Ganzhou in a single bowl.

Topped noodles run through much of the Northwest, but the Ganzhou version stands on its own, its topping thicker and more savoury, in harmony with the local tofu and glass noodles, a homely staple in both family kitchens and street noodle houses.

Served in a deep bowl with the topping heaped on, mixed through while hot so the sauce clings to every strand; chilli-lovers add a spoon of chilli oil, with a side dish or a meat-filled bun for a typical Zhangye lunch.
