Tujia Three-Pot Stew
Món ăn nổi tiếngTujia Three-Pot Stew (sanxiaguo) is a signature home-style dish of the Tujia people around Zhangjiajie. Several meats and offal — typically pork, cured meats and innards such as tripe — are blanched, then cooked together in a single 'dry pot' with chili, ginger and garlic until intensely flavored, with little broth and plenty of substance.
The dish grew out of life in the mountains of western Hunan. It is closely tied to the Tujia custom of 'guogannian' — celebrating the New Year a day early — when several dishes were combined into one pot to save time and feed a crowd. At heart it reflects a mountain practicality: use what is on hand and cook it together.
It is most at home as a winter and festival dish, shared around the table and eaten with rice. Today it is often served as a simmering dry pot at the table, deepening in flavor as it cooks — a centerpiece for family gatherings and welcoming guests.
Its character is boldness: chili heat, savory depth and the smoky note of cured meats playing against rich offal. For a visitor it is the most direct way to taste Tujia cooking and its festival culture.
