Brine-cured red crab is a traditional Ningbo cold dish in which roe-laden swimming crab is salted raw (with rice wine) rather than cooked, the meat "ripening" through salt and time.

Facing the sea with abundant catches, coastal Ningbo households have long preserved seafood in brine, and cured crab grew from that habit; it represents the raw-and-salted strand of Ningbo cuisine, kin to the "three stinky" dishes and salted fish.
