Zhang's wonton, also called 'Matai Street wonton', is made with white flour, chicken, shrimp, vermicelli and thin egg-skin in a rich broth — thin-wrapped, fresh-filled and full-flavored, bursting with juice when bitten, a classic of the Luoyang old-city repertoire.

Carried on at Matai Street in the old city for over a century, Zhang's wonton is a handmade snack handed down across generations. As early as the 1940s it was ranked among Luoyang's famous local snacks, alongside the Water Feast and bu fan tang, woven deep into the memory of the old quarter.

Eaten hot by the bowl, broth and wontons together; paired with tender chives and Chinese toon in spring, chive shoots and scallion in winter — fresh and fragrant with a touch of sour heat, fine as breakfast or a warming bite.
