Chongqing xiaomian is the city's most common street noodle: alkaline wheat noodles whose soul is the sauce waiting in the bowl, a blend of more than ten elements, chili oil, ground Sichuan pepper, soy sauce, ginger-garlic water, preserved mustard greens, and scallion. It can be a plain bowl or topped with peas, minced-pork sauce, or beef.

Xiaomian grew from the noodle-stall culture of Chongqing's lanes, the most everyday breakfast and quick meal of the city's people; carefully seasoned, cheap, and intensely flavored, it runs deep in daily life and carries the morning memories of locals, and has been listed as a Chongqing municipal intangible heritage.

It is tossed and eaten hot so the red-oil sauce coats every strand; locals order to taste, asking for extra chili, drier noodles, or firmer texture, and the slurp of noodles at small stall tables is a hallmark of the city's mornings.
