Shouba Rou is whole bone-in lamb boiled in plain water to just-done, seasoned with salt, then eaten by holding the bone and pulling off the meat by hand — a traditional grassland delicacy.

Shouba Rou originates from Mongolian nomadic food traditions and gradually became part of Chengde's food culture as the Qing court held autumn hunts at the Mulan Paddock near the city.
