In 1829, founder Bian Fu set up a small stall near Xiaojin Bridge in Shengjing (today's Shenyang) selling steamed dumplings under the name Laobian. Thin wrappers, generous fillings and made-to-order freshness quickly built its local reputation.

Over generations Laobian grew from a single shop into a brand with branches across the country; in 2000 it was recognized by the Guinness World of China as the longest-running dumpling house, becoming an emblem of Shenyang dining.

Its signature technique is broth-braised filling: the meat is stir-cooked in stock before wrapping, giving a loose, tender and savory center that is rich yet never greasy; steamed, the wrapper turns translucent.

Laobian is a state-recognized China Time-Honored Brand, and its dumpling-making technique is listed as local intangible cultural heritage.
