Đợt 1Huizhou Guli is a Huangshan dining brand built around Huizhou cuisine, drawing on the old merchant creed of "trading with a scholar's heart" to fuse Hui banquets, folk-custom experiences and travel services, and serving as a major window onto Hui cuisine for visitors to Mount Huangshan.
As a recognised Chinese time-honoured brand, Huizhou Guli is known for its authentic Hui banquets and dramatised merchant creed; signature dishes such as stinky mandarin fish, hairy tofu and Huizhou cured pork on a board are its hallmarks, a well-known place for visitors to taste Hui cuisine.
Its kitchen holds to the old Hui methods of "rich oil, deep colour and exacting fire," skilled in braising, stewing and steaming; the stinky fish is barrel-cured and fermented, the hairy tofu pan-fried after deliberate white-mould inoculation, showing the cuisine's command of natural and fermented flavour.
