Also called bitter-oak tofu, the cake is made by grinding the acorns of the wild bitter oak (a chinquapin, Castanopsis) found on Mount Wuyi, straining, boiling and cooling the liquid into a pale-brown translucent jelly, soft and smooth with a mild bitterness and sweet finish.

Bitter oak is a common wild nut tree in the mountains of northern Fujian, and highland villagers have long gathered its acorns to make food—both a seasonal delicacy and a former staple during lean years, carrying the humble memory of Wuyishan mountain fare.

Once set, the cake is sliced and either pan-fried until crisp on both sides—dusted with sugar or chilli—or stir-fried with shredded pork and bamboo shoot, with a konjac-like bite and a cleaner fragrance, a rustic dish found in Wuyishan markets and farm-stay kitchens.
