Yangguan Sandie (Three Folds at Yang Pass)

Its name is drawn from the guqin melody Yangguan Sandie, itself setting Wang Wei's farewell poem to music in three repeated strains. Kong mansion cooking loves to fold literary allusions into its dishes, and this one borrows the parting mood of the old song, at once showing scholarly taste and the household's tradition of receiving guests with courtesy.
Served as a major dish at a Kong banquet, it is cut neatly while hot so the layers stay whole, prized for clean knife-work and unbroken strata; today some Kong-cuisine restaurants in Qufu recreate it, letting diners taste the literary elegance of official-house cooking.
Its naming after a farewell melody and the refined three-layered form make Yangguan Sandie a typical emblem of the Kong mansion tradition of "one dish, one allusion."
