Chaozhou gongfu tea is the small-pot, small-cup brewing art of the Chaoshan region, drawing chiefly on oolong teas — above all the local Phoenix Dancong — with techniques such as the high pour, 'Lord Guan patrols the city' and 'Han Xin musters his troops'.

Происхождение

The art traces back to the Song dynasty, was inscribed on China's national ICH list in 2008, and in 2022 entered UNESCO's Representative List as part of 'Traditional tea processing techniques and associated social practices'. It remains a core daily ritual of Chaozhou life.

A few people sit around a table while the host brews in a tiny red-clay pot, pouring in rotation into thin Ruoshen cups to be sipped hot and small; the liquor is golden and high in aroma, often shared with preserved fruit and snacks.

The 'gongfu' (painstaking skill) lies in the detail — from lighting the clay stove and boiling water in a sand kettle to rinsing the pot, skimming the froth and 'patrolling the city', twenty-one steps performed exactingly; quality over quantity, a complete tea ceremony fusing etiquette, craft and appreciation.
