Juchunyuan
1-й списокJuchunyuan was founded in 1865, during the Qing Tongzhi reign, near the Dongjiekou district of Fuzhou, making it one of the oldest surviving culinary houses in Fujian. It is traditionally credited to Zheng Chunfa, a former official's aide, with a name evoking 'a gathering of spring.'
The house became famous nationwide as the cradle of Buddha Jumps Over the Wall, the dish created by its chef Zheng Chunfa, and is regarded as a flagship brand of Min (Fujian) cuisine. It has twice been honored as a China Time-honored Brand.
Juchunyuan preserves the labor-intensive method of separately prepping each prized seafood and mountain ingredient before slow-simmering them together in a sealed clay urn, where more than a dozen components meld into a single mellow aroma over a controlled low flame.
Still operating today, Juchunyuan also serves as the designated protection unit for the national-level heritage craft of Buddha Jumps Over the Wall.
