Lijiang Baba-Making Technique
Провинциальное НКНThe Lijiang baba-making craft is a folk baking tradition born of the Tea-Horse Road, shaped by the caravans' need for a ration that would keep, carry and satisfy over long journeys. Its technique was listed among the first Lijiang municipal intangible heritage items in April 2005 and entered the Yunnan provincial heritage register in 2017.
The craft spans kneading, resting, rolling, oil-layering, filling and pan-frying, each step demanding exact control of pressing force and heat to yield a flatbread crisp and layered outside, soft and filled within. Today few masters fully command the authentic traditional method, and the craft's transmission is under real pressure.
The craft carries the culture of the Tea-Horse caravans and the Naxi food tradition, an important sample for the study of southwest trade-road folklore and folk flatbread-making, and one of Lijiang's most recognisable edible emblems.
