Huoshao mo is a traditional flatbread common to Shiyan and the northwestern Hubei region, made of leavened dough shaped into a thick round and baked against the wall of a wood-fired oven, emerging golden-crisp outside and soft and chewy within, often carrying a faint smoky wheat fragrance.

유래

Huoshao flatbread grew from the folk life of northwestern Hubei, suiting mountain farming with its simple wood-fired baking, long keeping and filling nature, long carried by mountain folk and travellers as a staple and eaten as an everyday bread around Wudangshan.

먹는 법

Broken open and eaten hot, or paired with beef or mutton soup, sanhe soup or hot-and-sour side dishes; locals also split it and stuff it with braised meats or pickles for a portable meal.

특징

The contrast of wood-fired crisp crust and soft crumb, the gentle smoky wheat aroma, and its plain, filling mountain character are the hallmarks of huoshao flatbread.
