Fang Ma Noodle House
제1차 선정Fang Ma Noodle House opened in 1983 in the old Fusu Road quarter of Yichang, founded by a woman neighbours called "Fang Ma." Beginning as a streetside noodle stall, it won its place in old Yichang with a springy bowl of noodles drenched in chilli oil, handed down across three generations and now among the city's longest-running breakfast noodle houses.
In Yichang, Fang Ma's chilli-oil noodles are a taste of home for old neighbours and returning travellers alike, with diners often queuing from afar just to relive the hot, fragrant bowl, hailed by local media as one of the gold-standard names of the city's breakfast scene.
Its chilli-oil noodles prize a springy strand and freshly dressed oil, with a chilli sauce slow-cooked from dozens of spices as the soul of the bowl; the topping is savoury, mildly hot and intensely aromatic, scattered with scallion, pickled mustard and crushed peanut, made to order in the deft street style of Yichang.
Fang Ma Noodle House was recognised as a Yichang municipal "time-honoured brand" by the city's commerce bureau in 2024; it is not on the Ministry of Commerce's national China Time-Honored Brand register.
