Shunzhuang Yellow Noodle House was founded in the late Qing dynasty; its second-generation master Ma Shunzhuang opened the noodle house at the close of the Qing and by the 1940s was a renowned name in the craft, while the third generation, Zhang Shicun, once won praise from early generals of the republic. It is the only century-old shop in Dunhuang handed down through five generations.

유명해진 이유

Shunzhuang's donkey-meat yellow noodles are called "a wonder of China" and stand as Dunhuang's most representative flavour; a folk saying holds that "the dragon's meat is in heaven, the donkey's meat on earth," and the house is known to all around Shazhou Market.

Its yellow noodles are made from fine wheat flour blended with alkaline desert plants, drawn by hand through kneading, lifting and whipping into strands fine as a dragon's whisker, long as a golden thread and springy to the bite, dressed in a sauce of shiitake and diced donkey and served with braised donkey meat; the craft is listed as a municipal intangible-heritage protection unit in Dunhuang.

Shunzhuang is a locally renowned century-old dining house whose noodle craft is a Dunhuang municipal intangible-heritage item; as it does not appear on the MOFCOM China Time-Honored Brand register, it is recorded here as a regional brand.
